our daily routine. Before Transforma- tion Knoxville, I cooked, but I wouldn’t necessarily say I always put good food
in my body and I certainly wasn’t always cooking a healthy breakfast or lunch for myself; I mostly only cooked dinner and
I often survived on power bars through- out the day. Bulk prepping food never occurred to me! However, by month three I was eating mostly healthy foods—and
I found just a couple of hours on Sunday to prep meals for the week is all the time I need. I buy family packs of chicken and bake it all at once. I even find myself sautéing gallons of vegetables at a time until they are just undercooked so that
as the week goes on and I heat meals,
the components aren’t mushy or tough.
I have created a new Sunday afternoon ritual: By making a week’s worth of food at once, I’m able to leave the arduous task of daily meal prep behind. Time I would spend cooking is now spent enjoying other activities, such as jumping on the trampoline with my sons.
By the end of the first 90 days, I lost 15 pounds, 8 percent body fat, and 3 inches off my waist. I not only saw a physical change in how I looked, but also in how I felt. I have more energy. I sleep better. I even find myself making time to paddle my canoe or swim just for fun. That I
even consider these activities after long days at the office is a sign that things are changing in my life for the better.
With so much success, I had to keep going, and when I talked with Becca, I knew she, too, was ready for something more. We are now closing in on a full six months of Transformation Knoxville activities. We have learned a lot over the last six months, lessons that we have found can be tailored to anyone who
is simply willing to commit to better health. Let’s take a look back at the first six months. I hope you can find some takeaways to add to or help kick-start your own healthy lifestyle overhaul—
