Mark Davis – Connor’s Steak & Seafood

Davis started working in the restaurant business when he was in college. He enjoyed his experience in the front of the house and says that enjoyment took him to the back of the house where the teamwork attitude in the kitchen appealed to him. He has worked for Connor Concepts, which also includes the Chop House, for 26 years. At Connor’s, he helps develop menus, open new locations, and maintain the Connor’s brand. This requires long hours, but the camaraderie with the staff feels more like time with a second family. Davis says the food philosophy is to keep things as simple as possible, making sure they have things on the menu that people enjoy. He also cooks for himself, his wife, and family and says short ribs tend to be a family favorite. His personal favorite home-cooked meal is lasagna—his secret, a good moist béchamel sauce!


Bacon Corncake with Peach Salsa

Beautifully designed, Davis layered cider-braised bacon and fresh peach-tomato salsa on a roasted corncake. For additional pops of flavor, he drizzled an avocado crème and toasted pumpkin seeds over the top.


Peanut Butter Tarte

This decadent mascarpone peanut butter tarte brought together all the best southern flavors, including brûléed banana and toasted
Virginia peanuts.
