Warren Weiss – Knox Mason

Warren Weiss, chef de cuisine for Knox Mason, grew up in Indiana. He’s been in the Southeast for about 14 years now and says he’s loved every minute of it. He made a stop for several years in Alabama learning from a renowned chef who emphasized using locally-grown ingredients and supporting local farmers. He made his way to Knoxville about four years ago. He says once he came to Knoxville, it was easy to get back in a groove of working with local food producers in our region. Weiss is a downtown resident and loves working downtown—a perfect fit for Knox Mason, which has operated on South Gay Street for five years. It is due to reopen in September in the Embassy Suites Hotel on the corner of Gay Street and Union Avenue. Weiss says the restaurant has been on the polished side of casual. The new location will be adding a lunch menu and Weiss predicts more Creole and French influence than they’ve had before.

Pork & Beans

This elevated pork and beans dish included pork sausage, stewed white beans, local kale, house-made chow-chow, and incorporated fresh local herbs throughout.

DESSERT

Banana Pudding

More than a traditional banana pudding, Weiss layered it with vanilla wafers, fresh bananas, and topped with a beautiful toasted marshmallow swirl.

KNOX MASON

Soon to open in the Embassy Suites on the corner of Union Ave and Gay, Knox Mason elevates southern comfort food, while accentuating southeastern ingredients, and supporting local farmers.
